How to Make Three Cheese Zucchini Rollatini
  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips about 1/4 inch thick.
  3. Mix together the ricotta cheese, half of the shredded mozzarella, half of the grated Parmesan, chopped basil, salt, and pepper in a bowl until well combined.
  4. Spread about a tablespoon of the cheese mixture on each zucchini strip and roll them tightly.
  5. Place the rolled zucchini seam-side down in a greased baking dish.
