How to Make Three Cheese Zucchini Rollatini
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips about 1/4 inch thick.
- Mix together the ricotta cheese, half of the shredded mozzarella, half of the grated Parmesan, chopped basil, salt, and pepper in a bowl until well combined.
- Spread about a tablespoon of the cheese mixture on each zucchini strip and roll them tightly.
- Place the rolled zucchini seam-side down in a greased baking dish.
- Pour the marinara sauce over the rolls and top with the remaining mozzarella and Parmesan.
- Bake for 25-30 minutes until bubbly and golden.
