  • 1/2 cup Unsweetened applesauce as an egg substitute
  • 1 teaspoon Vanilla extract
  • 1/4 cup Plant-based milk
For the Coating
  • 1 cup Powdered sugar for coating

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients: In a bowl, combine the all-purpose flour, cocoa powder, baking powder, and salt.
  3. Combine the wet ingredients: In another bowl, whisk together the granulated sugar, brown sugar, unsweetened applesauce, vanilla extract, and plant-based milk until smooth.
  4. Fold the wet mixture into the dry mixture until just combined.
  5. Scoop the dough into rounded tablespoonfuls and roll each in powdered sugar. Place them on the baking sheet, spaced about 2 inches apart.
  6. Bake for 10-12 minutes until set at the edges but soft in the center. Let cool for a few minutes before transferring to a wire rack.
  7. Optional: Dust with extra powdered sugar before serving.
