  • 1 tbsp maple syrup can substitute with agave syrup
  • 1 tsp smoked paprika infuses a delicious smoky flavor
For the Sandwich
  • 4 slices whole grain or sourdough bread choose your favorite for toasty goodness
  • 1 cup lettuce romaine or butter lettuce for a crisp crunch
  • 1 cup ripe tomatoes heirloom varieties add a beautiful twist
  • 2 tbsp vegan mayo can substitute with avocado for a different texture

Method
 

Preparation Steps
  1. Marinate the tempeh: In a bowl, combine soy sauce, maple syrup, and smoked paprika. Brush this mixture onto tempeh strips and let marinate for at least 15 minutes.
  2. Cook the tempeh: Heat a splash of oil in a non-stick pan over medium heat. Cook marinated tempeh strips for about 5 minutes on each side until golden brown.
  3. Toast the bread: Toast the slices of bread until perfectly golden.
  4. Mix the sauce: In a bowl, whisk together vegan mayo, remaining smoked paprika, and a pinch of salt.
  5. Assemble the sandwich: Spread sauce on one side of each toasted slice. Layer lettuce, tomato, and tempeh on the saucy side and cap with another slice of bread.
  6. Serve with love: Cut the sandwich diagonally and serve immediately.
